Field mapping a form applies to creating fields in contact records. When a new submission is received, it shows an “activity” in the contact record which includes all fields, mapped or not. Nimble CRM used to offer two-way contact synchronization between Nimble and Gmail or Outlook 365 via a third-party application called PieSync. Well, HubSpot bought PieSync, rolled it into their suite of services, and left the rest of us hanging out to dry. Google or Outlook should be where you manually add contacts.

Zapier will work with probably most 3rd party web form applications such as Contact Form 7. They are not available within Gmail or Outlook interfaces.
